Enjoy a Vegetable-Centric Thanksgiving

With more people interested in adhering to a plant-based diet, you may want to think differently about your Thanksgiving meal. A healthy, plant-based diet includes an abundance of nutrient-dense plant foods, such as vegetables, fruits, beans, peas, lentils, soybeans seeds, and nuts, and fewer processed foods, oils, and animal foods (including dairy products and eggs). For your Thanksgiving table, that might mean a lentil-based version of Shepherd’s pie, meatless stuffing, a main dish of acorn squash stuffed with wild rice, plenty of roasted cauliflower and Brussels sprouts, and perhaps even some vegan desserts—a bountiful table to be thankful for!
