Can you remember being served green peas at dinner and being told to eat your vegetables? Here’s a surprise: Green peas are not vegetables. Technically, they’re legumes, like lentils, chickpeas, beans, and peanuts. Nutritionally speaking, peas are powerful little things. They contain an impressive array of vitamins, minerals, and antioxidants, a good amount of filling fiber, and – here’s another surprise – they’re a great source of plant-based protein.
